High Protein, Anti-inflammatory Vegetable Soup

So until recently I had never heard of Freekeh before. But I was recently sent some from Peopletail and Vista Magazine as well as Whole Turmeric paste. Some part of me felt like these two products paired well together but I wasn't sure what I should I make with them. Well we love soup in our house all year long so it only made sense that I made a tasty soup.
Freekeh is actually made from green durum wheat that is roasted and rubbed to create its flavour. It is an ancient dish derived from Levantine and North African cuisines, remaining popular in many countries of the eastern Mediterranean Basin where durum wheat originated. Freekeh is high in fibre and protein. If you are diabetic this is great because it will keep your blood sugar steady(wholegrain freekeh GI = 43).
Here is the recipe for my soup I really hope you like it.

Ingredients:
1 cup Freekeh
1 tsp Whole Turmeric Paste
1 28oz canned diced tomatoes with the juice
3 carrots peeled and chopped
2 cups kale chopped
1 medium yellow onion chopped
1/2 tsp sea salt
pepper to taste
2 medium potatoes chopped
1/2 tsp sea salt chopped
8 cups of vegetable broth
Directions:
Add all ingredients to slow cooker and cook on high for 6.5 hours
This soup is super simple , really tasty and filling.
