The final days of 2017
As the final days of 2017 come I sit here and think about all the blessings that have happened. Yes there was a few hard times this year and truthfully those hard times were also blessings of lessons learned.
I didn't accomplish everything I wanted this year but that is ok with me because in all honesty I spent most of the year watching my son grow and spent most days making memories with Ryan and our son Liam. We are a family that craves to be outside in nature so most days we were out of the house taking in the sunshine and hiking in the beautiful forests near us. Liam has a collection of beautiful rocks he has collected on our little nature adventures and has lined his bedroom window sill with them.
Today is the Winter Solstice and we are so ready for more adventures this time in the snow. It has been a long time since we have had snow on Christmas day where we are but this year it looks like it just may happen. Let me tell you how exciting that is going to be we have our snowman making kit ready and plan on spending a good part of Christmas day outside building snowmen. We have a pantry stocked with amazing ingredients for hot chocolate that I plan on making in the slow cooker Christmas day.
Here is the recipe for slow cooker hot chocolate:
1/2 cup of Cacao powder (or cocoa powder)
2 bars of good quality chocolate broken up (I like Giddy Yoyo or Green and Blacks)
1 14 oz can of coconut milk.
6 1/2 cups of cashew milk or you can use almond milk
3 teaspoons of coconut sugar
2 teaspoons of pure vanilla extract.
dash of salt I love to use Pink Himalayan.
I toss it all in the slow cooker and turn it on high for about 2 hours, stirring occasionally. After 2 hours I turn it down on low and voila we have hot chocolate all day.
You can jazz this up a bit by adding:
A few drops of Peppermint oil or extract
Homemade whip cream
Marshmallows (Dandies has great ones)
